Colorful Chicken/Vegetable Spaghetti

2 tbs. Olive oil
1 can chicken broth
3 boned chicken breasts
1 green pepper
1 red pepper
1 yellow pepper
1 bunch green onion
½ medium yellow squash
½ medium zucchini squash
12 oz. Fresh mushrooms
1 small can sliced black olives
1 ½ lbs. Of spaghetti, cooked
Riley’s All-Purpose Seasoning
Parmesan cheese

Cut up all vegetables, and set aside. Put on water to boil the spaghetti. Heat wok or electric skillet to medium high. Put in olive oil and can of chicken broth. While mixture is heating, cut up chicken breast into bite size pieces. When oil and broth mixture is hot, add the chicken. When the chicken is cooked, add the vegetables, mushrooms, and black olives. After about ten minutes of simmering the vegetables, add the cooked spaghetti. Mix thoroughly and use Riley’s All-Purpose Seasoning to taste. Turn the temperature down to low for about 5 minutes while it continues to simmer. Add parmesan cheese on top of individual serving.

Note: This dish can be made with shrimp, beef, or pork. Any vegetables that you prefer will also work. Some like water chestnuts in it.
